Quick and simple recipe: the Patate 'mpacchiuse is one of the milestones of traditional cooking of Calabria. This recipe requires few ingredients and it is perfect both as side dish and main meal.

500 gr patate / 160 gram of potatoes2 cipolle bianche / 2 white onion

Dopo averle accuratamente lavate, pelate le patate e tagliatele a rondelle mediamente sottili. Sbucciate e lavate le due cipolle bianche e tagliatele a spicchi.Wash and peel the potatoes, then slice each potato into rounds. Then peel and chop the two onions.
Pour extra virgin olive oil in a fry pan: put potatoes and onions in it and sprinkle salt on them.
Cover the potatoes with a lid and cook over low heat for about ten minutes, then mix using a perforated spoon. Increase the flame slightly and put the lid on them again, so the salt will raise the steam.
During the last ten minutes of cooking, remove the lid and mix everything so the potatoes will become brown as in traditional Calabrian recipe.
